Anything you do on a work laptop can be monitored.
But just like security cameras in most businesses, nobody is monitoring until something happens then they'll go back and review recordings
My guess is you are ok using your own cell phone. Company phones can be monitored.
You should also do any private web surfing on your own devices and cell phone network and not cisco network an computers. They do have a right to monitor that.
They pay you a salary to monitor every activity of yours. AI does it seamlessly.

I know that there is a general warning that you can not expect privacy on a company laptop but even there there are limits.
Ex: I might have issues that I do not want to disclose. The company giving someone the right to look into what I say and do is a problem in itself. If that person who is monitoring or accessing the logs leaves the company that becomes a problem. There is probably NDAs in place but ...still...
AI is probably the current solution but unless you can avoid the law like FBI or CIA would do and you have a court order or something, is not that simple. The measure is more to discourage and get you scared.
What they can do is use logs and look into them if there are issues but just monitoring for the sake of it to see what you are doing is not happening
Check with chatgpt the specifics for your country and you will learn that it is not that simple
