Is untaken sabbatical considered as a paid vacation that I should be paid for? Or do I lose it?

They've done it this time but no guarantee to include it in every layoff other than these times, right?

Just thinking may I should take it just in case.

Intel adds your unpaid sabbatical to your severance package pay. They do pay you for the sabbatical.
