I spent half-an-hour and now it's not letting me go forward because it says "last day of work is a future data", since I entered 5/31. All those people who were advising to file now, how did you do it?

I filled out the paperwork over the phone. The person told me that everything is ready to go, but I will have to come back to the online tool on Sunday (June 5) to actually initiate a claim. In the meantime, I have received a letter that listed 4 steps I needed to complete in order to be eligible for unemployment insurance, which included a visit to WorkSource Oregon. Since I have completed all that, if I make a claim on this coming Sunday, I should be all set. Otherwise, you may have to do these steps after you make your claim.
Could you do any work for Intel after they walked you out? The answer is no, regardless of whether you were still getting money from them.
You can't file for unemployment until a week after your last day of work I believe.

my understanding was you shouldn't file until the 31st. Who said to file sooner?

This is OP. But we are paid until "5/31". So unemployment benefits should commence only from 6/1. So, I'm not sure if that date has to be 5/31 on that page. or somewhere later it's going to specifically ask for when we are "paid untiil" ?
