Planning to quit in 2025 and go back to school full time. What benefits should I cash out on first? I'm thinking the my holiday, 2 volunteer days, glasses with the vision credit, dental cleaning, and a doctors check up. Am I missing anything else?

When you next get a full-time job, if you are able, try to max out the company matching your 401(k) as early in the year as possible (in case you get laid off later). Meaning: set your paycheck contributions higher for that. Make that free money work for you!
If you have any stock options you haven’t exercised, I would start looking to do that bc they are expire within 30 days of termination. Also any elective surgery? I’d take all of your STD if you can do that ethically.

Depending on what state you reside in, your vacation days will not roll over into 2025. Use them in 2024 or lose them.
Don't announce your plans to quit as that may disqualify from a severance package in the event your job is eliminated before you start school.
My unsolicited advice to you is to keep your plans to yourself and wait as long as you can before giving your 2 weeks notice, and do give 2 weeks notice.
It's important for you to leave on decent terms as your next employer will definitely do a background check on your U.S. Bank employment. This is no time to get pissy on your exit as you have a future to consider.

Unpaid holiday and your pension can be rolled over if you have been here the required period of time. No my holiday or anything like that those get forfeited, and you will not get unemployment because you were quitting
