NDAs are not enforceable when exposing illegal criminal activity. .

I don't know about US but in Europe to enforce a NDA when you're not in employment requires compensation.

"Yes" there have historically been clauses governing what you say/publish about the company. This is above and beyond an "NDA" which should be focused on technology, processes and other intellectual property. "Boss X is an ar--hole" and similar inflammatory stuff could be problematic.
If you have the financial means, I would wait to accept the package on the chance you get re-employed quickly. That keeps you free to publish about your experiences (assuming you want to say bad things).
Even then, good things are restricted, as well, as I recall. Basically, "Here's some money. Don't talk to the media about this".
