Anyone entertain these, even if you just blow smoke to collect a check? What’s the downside here to accepting offers from these folks to pick your brain?

If you are blowing smoke, it'll become quite clear as the interviewer is likely knowledgeable about the topic and talking to other professionals in the same field. They can and will provide feedback on whether you're a good interviewee and whether they are getting value. You will likely be told not to share any sensitive info or IP. You will have also likely signed a contract. Don't waste their time or quite frankly your own.

Any way for your employer to take retribution for these things, if you’re responsible and generalized in the sharing?

They are taped. You will get a one time fee and they will sell your insight to clients in perpetuity. You are no longer needed.
