It has gotten to the ridiculous point where I work (remote worker) 8 hours straight in all day meetings where you share your screen with the whole team and you cannot eat or drink or go to the bathroom. This is inhumane and degrading. I would rather be homeless where I have the freedom to at least use the restroom and eat lunch. Thank you for listening. I quit.

That doesn't sound like a workplace. What you described sounds more like prison. So sad.
This is either complete bull$h*t or the easiest way to get fired as a manager. Even if you’re on a PiP you wouldn’t be allowed to prevent bathroom and lunch breaks.
If it’s happening go to a labor attorney first. Then employee relations. Collect proof before you do - meeting invites, emails, etc. Tell no one.
What you claim is illegal and I seriously doubt is happening. If it is, find yourself a labor lawyer and file suit. You are at home, what is stopping you from going to the bathroom or grabbing lunch?
Good for you and quit. Treating employees like is will end in their failure. They are failing you. You deserve better.
