How much does the company pay in severance when there's a separation in employment? Also, do we have to sign a non compete agreement?

Severance is never guaranteed or required. When offered it is usually based on years of service (like 1 week for every year). Again, it can vary.
Non-competes are usually director and higher, however it could be a clause in your severance agreement, if offered.
@OP I know a few who have gotten severance.
