Food stamps (SNAP) eligibility is based on monthly income, not employment status.
So you're being paid through 1/3/2026. Then you get severance. When that runs out you can apply for unemployment. The income limits vary on family size, so you still might not qualify even on unemployment, but check.
In short, it's all about income you made during the month you're applying.
If you are still getting paid ( which severance is) your income has t changed, why look for handouts right away. Hopefully you find a different job right away and will come out ahead as in severance+ new paycheck.

In Minnesota, you can’t start getting unemployment until your severance runs out. Meaning, if you receive 4 weeks of severance pay (as an example), your unemployment payments wouldn’t start until 4 weeks after Jan. 3.
SNAP benefits are based on household income and size. Since you are getting severence and salary till Jan, high chance you may not qualify now. It's my understanding you are on the payroll until 3 Jan 26. Then there is a severance. And then you can apply for assistance.
