Is it possible to quit and collect unemployment benefits in NYS?

No not if you quit. Let them terminate or lay you off
Worth applying but as other poster said likely will be denied. Believe you can appeal. Bank outsourced review of unemployment claims to 3rd party company. So them denying you costs them money so why not? Who knows you might get it and if not you at least got to annoy the Bank by costing them a bit on the way out.
Best course of action is to treat every paycheck as an opportunity to fund your emergency fund to float you when the paychecks are no longer coming in.
You can receive unemployment benefits after quitting your job ONLY if you have a "good cause" reason, such as unsafe working conditions or health issues. It needs documented, Doctor’s notes and proof of complaints you filed at the workplace.
This place is flesh eating disease alright, but are you prepared to fight for this small benefit?
