If they’re taking away our work, and giving it to a vendor, and not giving us a choice but to go to um/uim, what happens if I say no? I wasn’t hired for that.

No severance if you do not transfer. You are resigning.
The contracts were/are for 3 years so the vendors are pretty much stuck with the Allstate employees that they took on as part of the contract until the first three years are up. After that most of us fully expect to be let go with nothing considering we are making triple what a lot of the overseas team members are.
Something else to be aware of. Your pay/benefits may be very similar for the first year or some period of time, but that can change after the contracted period.
My area had people who rebadged 2 years ago, and many are still around. So, it may not be terrible depending on the company.
They did this with several areas in the U.S....they basically moved us by force to a vendor and we are no longer employees of Allstate but of the vendor. We do the same work but for the vendor who is contracted to Allstate. Allstate said if we rejected the move to the vendor it was a voluntary term and no severance and they would try to block unemployment benefits for refusing offered work.
And they don't pay severance and will move you to another company's work not even related to Allstate. I had a peer that got moved to the vendor from Allstate and now she is doing collections calls for another of the vendor's contracts. She is miserable.

You will most likely be let go. Basically you are voluntary quiting by not accepting the new role they are placing you in.
