Essential fatty acids (EFAs) are types of polyunsaturated fats that your body cannot produce on its own, so they must be obtained through your diet. Essential employees are similar- the company can’t produce them on its own so it must obtain them through its diet.

Best position is bent over and prepared for impact.

It's easy.
If you spent your time last week helping to get oil out of the ground, then your role is essential.
If you spent your time last week working on excel and powerpoints that talk about efficiency then your role is not essential.
Some roles are essential and some are not. that does not mean the people in those roles will be keeping their jobs.

The role is.
You aren’t.

Wouldn’t it mean that the role (and my job) is safe ?

That means if you put in for an EOI it will not be accepted. I’ve been denied the EOI severance package twice because the manager of my department deemed my role “essential”. It’s just the company’s cheap azz way of letting you know that you are their slave and that they will not pay you to leave voluntarily.
