I am so fed up with my manager that I'll be resigning in late December - I do not have anything lined up but I am so done with her.

Never quit on your own terms, you can't get severance doing that. Just do the bare minimum and be fired by Coke so you get severance. Obviously, apply and network like crazy for interviews when you get home and prioritize interviews over your job. But don't quit on your own.
