I have been offered transition offer letter roll Aug end 2024. If I agree, can I resign in between if I get another job. I am ok to give up on bonuses and other components.

yes but usually the bonus is worth it if you can line up your new role to align with severance/bonus
Its a new company employment scenario so the local laws apply. Its whatever your local law says relating to tenure and notice. Last Thursday was day one of employment.
