This is guaranteed to affect our work even if most of us try and double our workloads - which is impossible. Being the one left behind is not that great either.

OP, you meant you had team of 2 and half gone. 1 left. Your post doesn't help much unless you share actual team size.

2x additional engineers from India is worse than losing half of your team. You’d spend the next 2 years training them to perform trivial tasks.
