When my supervisor and I met regarding my layoff, she explained (and later emailed me a recap) that my last working day was on 8/31, but my official separation date would be 12/30… so I’d be getting paid until that date, and then my severance package would be an additional 8 weeks (based on the Colleague Separation Guide). I received an email today stating that my severance would run 10/22–12/16, and I’m super confused now. Has anyone gone through something like this?

All depends on the state you live in.
Due to the NJ State WARN Act, Those of us in New Jersey are considered active employees until November 18th. This is our separation date. y last system access date was 8/31 as well.
What did you get in writing?
Per state requirements, some were given a 90 day notice. This could be what has happened.
Sounds like a miscommunication by your mgr. Everyone who was let go from my area was given the same separation date (end of Oct) and that is when severance starts.
Check the original paperwork you received and verify the date. If that aligns with what you were told and the package does not. Contact your manager and HR. If nothing comes of that, you may have to seek legal advice.
