After you e-sign open back up the document via link and click the "Other Actions" menu on the top right, then select "View History". You can then select "Show Certificate" which allows you to view a PDF of the history. This gives an exact timestamp of all events and interactions with the document, including when it was signed, submitted, and who it is going to.
