I'm tired of Dell and the overall "big company" culture and structure. One of the main reasons why I never applied to a startup before was job security. As that is no longer something any of the big companies are offering either, I have no reason not to. Plus, they are hiring, unlike many of the usual suspects.

I agree with your point that if your reason for sticking with large companies was job security, that is not necessarily valid since obviously they will go through layoffs. However, you may want to be cautious with your timing at the moment going to a startup. Higher interest rates will make it more challenging for startups which operate on other peoples' money. As borrowing gets more expensive, startups will really need to show that they have a practical business model and a path to profitability. Many frivolous companies will fold.
best way to pick up alot of new skills is by working in a startup. You're forced to wear multiple hats. Good for you, it's worth the risk.
Job security is a false notion, in any context.
