I know not to apply at IBM, for example. But does anybody know which companies care about the experience and knowledge that comes with age and will make a decent offer to older employees instead of lowbowling them? I've heard positive things about FAANG, but most of them are either in a hiring freeze or laying off themselves. Any ideas?

Honestly...? Broadcom. We have a hiring policy for experienced stable employees.
Try to government contracting companies like Boeing, Raytheon, L3Harris, etc. They usually like older people with experience since the new younger crowd is always rushing to get the delivery done. In Military equipment, no matter what, they have to make the product work cause lives are depending on it. They know the older employees have lots of experience and get the work done with great quality since they have lots of experience.
If all else fails Department of Social Protection for Jobseekers Benefit. Max€208 per week for 9 months.

Depends on the skillset/leadership skills you bring to the table. If you have experience navigating companies through bankruptcies and laying off employees, then you may have a good chance.
Do manage options and many that pay better than VMWare and Broadcom.
