I got an offer to go to a startup company. They do really interesting things and I think they have a lot of potential, however, I still hesitate. For a long time I wanted such a challenge, the work here has become boring to me, the leaders of the company are clueless, but on the other hand, I would not have some benefits like I do here. In what cases would you go from here to a startup company?

Immediately. I am in the same boat. The benefits are sticky, and it's hard to walk away from them. But you have to love yourself more than the benefits, and think really hard about what you want to look back on at the end of your life.
And if you make a mistake, there are plenty of big d-mb tech dinosaurs like this one that have plenty of open jobs that nobody good really wants (along with good benefits), so you could always get back in the grinder.
